What are Arepas?

Arepas are a South American corn cake made of ground maize dough or cooked flour. Pretty much the substitute for toast in the cuisine of Colombia and Venezuela. It is eaten daily in those countries usually for breakfast or for dinner.

In our home we usually have it for breakfast where is is great with eggs and fresh fruit. Sometimes we will have it for dinner with a chicken soup. Occaisionally we like to split them open and fill them with a variety of ingredients including avocados, pulled pork, chicken or beef and vegetables.

As a Canadian I am so used to having two pieces of toast that when I started eating them I would eat two. It didn't take me long to realize that its really not necessary to eat two in one sitting but if you are hungry they sure can fill you up!
